A loaf of bread, eating it provides a boost to health, hunger and hydration. Feeding to a horse will provide a boost to its digestion and dung production for a short time.
Two mouths can use it: yours and your horse's. Eat it and the game text promises a boost to health, hunger and hydration at once, so a single loaf moves all three bars. Fed to a horse, it speeds up the animal's digestion and dung production for a short time.
That second use is the one farmers care about. Say you ride home from a run with a loaf in your pocket and a farm that is short on fertilizer. Give the bread to the horse waiting at the hitch and trough, and the pen fills with dung a little quicker. Shovel the piles into a composter next to your planters and they come back as fertilizer.
Nothing on the site crafts it, so every loaf is a find. When you have both, eat the brioche yourself, since its text promises a large boost, and hand the plain loaf to the horse: for the animal, both texts read exactly the same.
